I have a heavy heart- I’ve HAD a heavy heart, these past two weeks. It’s hard for me to go on with my normal routine now that a light has been cast so brightly on the systemic oppression and injustice in this country. It is something that cannot be unseen and I am doing my best to listen, learn, and act to be a better ally. This past weekend, I was able to attend a peaceful march against police brutality. Listening to people express the pain they have suffered will stay with me forever. I encourage everyone to get out to one of these events if you are able. Of course there are countless other ways you can participate if protesting is simply not in the cards (we are in the midst of a global pandemic, afterall)- you can donate, have discussions, post on social media, VOTE when the time comes.Every effort is needed to help move the needle. If for any reason you are struggling to understand this movement, I beg you to reach out to me to have an open and honest discussion. Now is the time for reflection and growth.
That being said, I think now is also a great time for a cocktail- I know I sure as hell could use one… or three. Thai Basil is my all time favorite herb and it is stunning when paired with tequila and lime.
Thai Basil Mojito
15 Thai Basil leaves
1 lime cut into wedges
1 tablespoon simply syrup
2 ounces white rum
1/2 cup coconut water
Ice
In a cocktail shaker, add the Thai Basil leaves and half of the lime wedges. Muddle together- breaking up the leaves and juicing the limes. Add the rest of the limes and simple syrup, muddle together. Pour in the rum and add ice. Top the shaker and shake until ice cold. Strain into ice filled glass, top with coconut water and garnish with lime. Enjoy!
