Rescue Juice

Fun game alert! Take a shot of green juice every time I say green juice in this post.  I’ve officially hit that point in this quarantine where my body is craving greens. I’ve enjoyed the carbs and sugar (let’s be honest, I will continue to indulge) but my body is  BEGGING for a nutrient dense green juice that is worthy of an LA influencer. This is a green juice recipe I’ve been drinking for years- even prior to celery juice making its claim to fame. This is a green juice that doesn’t TASTE like a green juice and bonus: it’s low in sugar! It is absolutely perfect for those new to green juice or those who have traded green juice for margaritas these past few months (me). I’m calling this recipe rescue juice because that’s what it feels like when I drink it. It’s almost as though my body audibly sighs in relief after every sip.

Just a few tips: if you cannot find the Thai basil below, you can absolutely substitute for a mint/basil combo! Also, when juicing the spinach and Thai basil, you will want to juice them at the same time as the apple. If you don’t do this, the machine will just shred the spinach and basil instead of juicing it. Feel free to use this recipe as a baseline and experiment with the amounts/ your favorite fruits/veggies!

Rescue Juice: (This will make about two 16 ounce juices)

1 bunch of celery

1 English cucumber

handful of spinach

about 12-15 leaves Thai basil

1 green apple

3 inch stub of ginger, peeled

1/2 juice of one lemon

Using a juicer, juice the celery and cucumber. Cut the apple into quarters. Place one quarter apple, handful of spinach, then another quarter of apple into the mouth of the juicer, then press down to juice. If you try and juice the spinach on its own, the machine will shred instead of juicing. Repeat this same process with the ginger/Thai basil. Add the juice of half a lemon. Personally, I enjoy this juice after it has chilled in the fridge for at least 30 mins. Stir before drinking and enjoy!
