Hi friends. In this isolation, there seems to be two constants on the internet. People are obsessing over animal crossing (DM for my DoDo code) and everyone is making banana bread. As I type this, bananas are currently on my countertop, browning every moment and waiting to be transformed into something delicious. I’ve been doing a lot of research on different techniques to make the BEST isolation banana bread. I’ve found some truly amazing recipes with interesting techniques I haven’t seen before. But you know what? None of those recipes came from the queen, Chrissy Teigen. So you know what? Those technically sound recipes will have to wait for another day. Chrissy’s banana bread has everything I want in isolation- chocolate, coconut, and artificial instant vanilla pudding. YES. PLEASE. So join me friends, for the banana bread recipe that broke the internet.
Chrissy Teigen Banana Bread: Adapted from Chrissy Teigen

2 cups mashed banana ( this was about 5 large bananas for me, if you are a little short on the mashed banana you can supplement with some applesauce or sour cream)
4 large eggs
2/3 cups canola oil, additional amount for pan
2 cups all purpose flour, additional amount for pan
2 cups sugar
1 3.5 ounces box instant vanilla pudding mix
1 tsp. baking soda
1 1/2 tsp. kosher salt
1 cup unsweetened shredded coconut
1 cup dark or semi sweet chocolate chip (Chrissy says 3.5 ounces dark chocolate bar chopped in pieces but this is all I had on hand!)
Preheat your oven to 325 F and prepare your bundt pan by coating with cooking spray or greasing then coating in access flour. I do not have a bundt pan, so I used an angel cake pan. You can alternatively use two 8 x 4 loaf pans!
In order to save on dishes, I mashed the bananas in a large bowl then measured out two cups using a small bowl. Transer the bananas back into the large bowl and crack your 4 eggs into the small bowl. Add the eggs and canola oil into the large bowl with the bananas. Whisk the mixture, eliminating any large chunks of mashed banana. In a seperate medium bowl, combine flour, sugar, vanilla pudding mix, baking soda, salt, coconut and chocolate. Dump the dry ingredients into the wet and slowly combine. You do not want to overmix, as soon as the dry ingredients are incorporated into the wet, stop mixing. Transfer the batter into your prepared pan. Bake for about 60-80 mins, checking at 50 mins. A toothpick should come out clean, with just a few crumbs, when the bread is done. Allow the bread to cool in the pan slightly. Using a butter knife, release the bread from the sides of the pan. Invert onto a plate. Allow to slightly cool some more, slice, and enjoy! (I love mine with cream cheese, chrissy suggests salted butter :)) Enjoy!
